Enoki

Enoki mushrooms are my new favorite kind of mushrooms. Different from others, enoki mushrooms have a stringy texture, and when cooked it can be soft and chewy at the same time. I bought some enoki mushrooms the other day, and have been absolutely craving to make this recipe "Sliced Beef with Enoki Mushrooms Japanese Style" (taken from the black peppercorn.com). I first tried this at a sushi restaurant, and it was amazing!

This is what you need:

  • 1-2 pkg of Enoki Mushrooms
  • 1 pound of thinly sliced beef (I used steak, but you can used hot pot beef or Korean sliced beef)
  • Marinade Sauce for the meat (the website uses a homemade sauce, but I used the Korean BBQ sauce Kalbi + garlic + ginger)  
The how-to-do (only a few steps):

1. Marinate the thinly sliced beef in the sauce.



2. Take the Enoki Mushrooms and slice the root/end off. Then in a large bowl with hot water, blanch the enoki mushrooms for 15 mins, then drain the mushrooms.



3. On a plate/cutting board, take a slice of the beef and a small bunch of enoki mushrooms -wrap the beef around the mushrooms tightly.


4. Heat the pan, add a bit of oil, and cook the beef and mushrooms- rotating each side of the wrap for 2-3 mins or until lightly browned or cooked.


5. Serve and Enjoy!
