Oh how time goes by fast! We are already in September and close to the beginning of fall! I will have to do a more reflective post of this summer, but first I wanted to make this post about breakfast egg and spinach cups. (As it is more fun posting about food!) Ironically, today wasn't the sunniest day ever (in fact, probably the first thunderstorm in a while), but these breakfast cups - makes the most perfect start to the day!
My inspiration for this recipe comes from The Domestic Mama and Village Cook. After browsing through several recipes, I decided that I simply had to try to make this - I was practically salivating out of my mouth when I read through the instructions! Here is the link to Egg and Spinach Cups.
The recipe is pretty easy peas'y. This is what you need:
1. Eggs
2. 1 pkg of Frozen Spinach
3. Cheese (I used Mozzarella) (1-2 tbsp)
4. 3 oz of cream cheese (less than 3/4 cup)
5. 1 pkg of frozen puff pastry dough
6. Salt and Pepper
7. Garlic Powder or finely chopped garlic (1tsp)
Ok, here are the steps:
a) Defrost, thaw and drain spinach.
b) Defrost the frozen puff pastry. Roll out the pastry on board and make about 4-5 inch (diameter) circles. Oil muffin tin and place each puff pastry circles in the muffin tin.
* Funny aside: I should have defrosted these puff pastries earlier, but didn't, so it turned out I had to use several ways of defrosting it - one which included the heat conduction from my hands! Oh boy.
c) Put drained spinach in large bowl. Mix cream cheese, mozzarella cheese, garlic, salt and pepper. Microwave everything for 1-2 mins or until cheese melts. Mix ingredients well afterwards. (Should look like spinach dip).
d) Line the spinach mixture in each of the puff pastry cups.
e) Now add the egg on top of everything else. I had some that only had egg whites - since the pastry cups were too small anyways for a full egg inside.
f) Bake at 425 F for 22-25mins.

Ooo SO good! How could you not let these little flaky pastries with creamy spinach and runny sunshine eggs start your day? Breakfast just got better. Boo yah!
