Coconut and Oatmeal Cookies

These are fantastic cookies. The look of these cookies might deceive you... allowing you to think they are bland, and boring cookies. But, these in fact are surprisingly sweet (but not too sweet), crunchy and the next thing you know, you've had a few of them already!

Here's how it goes:

1 cup of butter
1 cup of granulated sugar
1 cup of brown sugar
2 eggs
1 teaspoon of vanilla extract
1 teaspoon of baking soda
1 teaspoon of baking powder
2 cups of all purpose flour
2 cups of shredded coconut (I use 1 cup of sweetened and 1 cup non sweetened coconut)
2 cups of instant oatmeal

The steps:

1. Cream butter and sugars in mixer until light and fluffy.
2. Add eggs and beat together.
3. Add vanilla, baking powder, and baking soda.
4. Then add flour. Mix well.
5. Stir in coconut. Mix in oatmeal. You can add chopped walnuts or pecans if you like.
6. Make them into small balls and place on cookie sheets.
7. Bake 12 to 15 mins at 350 F.
8. Cool and Enjoy!
