Chocolate Covered Peanut Butter Balls and other goodies

This past Christmas, I stumbled upon a delicious and super easy recipe that I must share! I saw it on allrecipes.com - check out the link. Its Chocolate covered peanut butter balls. Even the name, makes me drool a little.

In terms of ingredients:
3 cups of rice krisipies
4 cups of icing sugar
2 1/2 cups of peanut butter
1/2 cup of butter
semi sweet chocolate chips

1. Mix well the rice krisipies and icing sugar together in a large bowl.

2. Heat a saucepan, add butter and peanut butter. Mix and heat until it becomes a thick liquid. (This part gets the kitchen smelling really yummy).

3. Remove saucepan from heat and let it sit for 2 mins to cool. Then pour mixture into the large bowl with the rice krisipies and sugar. Blend together thoroughly!

4. Form into small balls. Place on cookie sheets.
5. Refrigerate for 1 hr or until hardened.

6. Melt chocolate chips using the double boiler method. Dip peanut butter balls in the melted chocolate chips. As an option, I added crushed peanuts over the peanut butter balls for extra nuttiness! Put on cookie sheets and refrigerate again.

7. And voila ... all done!!

Here's all the other baking I got to do!

So Merry Christmas and Happy New Year!!
